Banana bread

A simple banana loaf. Low-fat options: use 3 bananas, 1 whole egg plus 2 egg whites, and 50 g oil; or use 2 bananas, 1 whole egg plus 2 egg whites, 50 g yoghurt plus 50 g oil; or use 2 bananas, 1 whole egg plus 2 egg whites, 50 g apple purée plus 50 g oil.

3 bananasmash 2 for the batter; halve 1 lengthwise for the toppingIn a large bowl, mash 2 bananas with a fork and whisk them with the eggs. Add both sugars, salt, and oil, then stir to combine.Gradually fold the flour mixture into the wet mixture. Mix only until the ingredients are combined; the batter does not need to be completely smooth.Pour the batter into the tin and level the surface. Lay both halves of the remaining banana on top, cut-side up.Bake on the middle rack at 180°C for 20m.Lower the oven to 160°C and bake for 40m more. Test the centre with a skewer; it should come out dry.
